Basic Pasta

Try your hand at making your own fresh pasta by following this simple method.

Method (Serves 4)

  1. Sift the flour into the mixing bowl. Beat together eggs, salt, oil and water and add to the flour. Attach a dough hook and commence mixing until dough has formed a ball.
  2. Tip onto a baking sheet and, using your hands, knead vigorously and thoroughly until dough is silky and smooth in texture. Shape into a ball, flatten slightly and wrap in cling wrap.  Place in the refrigerator to chill for 15 minutes.
  3. Divide the dough into three portions and roll each into a cylinder shape. Using a rolling pin, roll evenly before feeding through a flat pasta sheet maker on No.1 setting.
  4. Repeat on No.2 setting and continue until desired thickness and texture is achieved.
  5. Cut pasta into flat, wide fettuccine or thinner spaghetti. Keep it flat on a lightly floured baking tray.
  6. Cover with a clean cloth to prevent drying and repeat with remaining two dough portions.

  • 315g plain flour
  • 1 tsp salt
  • 1-2 tbsp warm water
  • 3 large eggs
  • 1 tbsp olive oil
