Method (Serves 8)

Cook Time: 40 minutes
- Pre-heat oven to 180°c or 160°c fan-forced. Grease and line a deep 20cm round cake pan.
- Beat butter, vanilla, sugar and egg in a bowl with electric mixer until light and fluffy – about 5-6 minutes. Stir in the flour and milk.
- Pour batter into the prepared cake tin and bake for 35-40 minutes or until a skewer inserted into the centre of the cake comes out clean.
- Turn the cake out onto a wire rack. Then turn the cake top side up and brush with melted butter, sprinkle with combined cinnamon and sugar.
Tip: Serve warm with a strong cup of tea!
