Cinnamon Tea Cake

Cinnamon Tea Cake with a crisp outer layer and a delicious crunch from the cinnamon sugar sprinkled on the top. Yum!

Method (Serves 8)

Preparation Time: 10 minutes
Cook Time:  40 minutes

  1. Pre-heat oven to 180°c or 160°c fan-forced.  Grease and line a deep 20cm round cake pan.
  2. Beat butter, vanilla, sugar and egg in a bowl with electric mixer until light and fluffy – about 5-6 minutes. Stir in the flour and milk.
  3. Pour batter into the prepared cake tin and bake for 35-40 minutes or until a skewer inserted into the centre of the cake comes out clean.
  4. Turn the cake out onto a wire rack.  Then turn the cake top side up and brush with melted butter, sprinkle with combined cinnamon and sugar.

  Tip: Serve warm with a strong cup of tea!

Ingredients
  • 60g butter, softened
  • 1tsp vanilla extract
  • 2/3 cup caster sugar
  • 1 egg
  • 1 cup self raising flour
  • 1/3 cup milk

 Topping:

  • 10g butter, melted
  • 1tsp ground cinnamon
  • 1tbs caster sugar
