Place the rice, antipasti, feta, parsley, lemon zest, salt, pepper and oil in a large bowl and mix to combine. Stuff the capsicum halves with the rice mixture, sprinkle with grated parmesan cheese and place on the oven tray.
Turn your Russell Hobbs Toaster Oven on to 160°c with top and bottom elements on. Bake the stuffed capsicums in the oven for 25-30 minutes until golden brown on top.
