Spinach Dahl

Spinach Dahl

Made with red lentils, Indian spices and spinach, this traditional Indian dish is extremely nutritious and filling. Serve with fresh coriander, natural yoghurt and roti bread.

Method (Serves 4)

  1. Turn your Russell Hobbs Slow Cooker on to HIGH.
  2. In a large frypan, heat the oil, add mustard seeds, cumin, onion, garlic, ginger and chillies, cook for just a few minutes until soft. Add turmeric, lentils and stock and bring to a simmer.
  3. Carefully pour the dahl into your pre-heated Russell Hobbs Slow Cooker, stir through the spinach and salt and cook for 4 hours.
  4. Serve with natural yoghurt and fresh coriander.
Ingredients
  • 2 tbsp peanut oil
  • 1 tsp mustard seeds
  • ½ tsp ground cumin
  • 1 medium onion, peeled and diced
  • 1 piece fresh ginger, peeled and finely chopped
  • 1 clove garlic, crushed
  • 3 fresh chillies, sliced
  • ½ tsp turmeric
  • 500g red lentils, rinsed
  • 500ml vegetable stock
  • 120g spinach, washed
  • ½ tsp sea salt
  • 1/2 cup fresh coriander leaves, to serve
  • 1/2 cup natural yoghurt, to serve
