Method (Serves 4-6)
- Pre-heat your Russell Hobbs Grill to medium heat.
- Sift the flour, salt and white pepper into a bowl. Make a well in the centre and add the milk and eggs. Whisk until batter is smooth. Add sweetcorn, spring onion, chilli (if using), cheese and stir until well combined.
- Generously spray your Russell Hobbs Grill with cooking oil spray. Place spoonfuls of the mixture onto the pre-heated grill and cook on both sides until golden brown.
TIP: Serve Mexican style with smashed avocado, sweet chilli sauce and a dollop of sour cream.
