Chicken Soup

Brimming with vegetables and packed with flavour, our chicken soup is not only highly nutritious but also extremely satisfying.

Method (Serves 4-6)

Preparation: 10 minutes
Cooking Time: 30 minutes

  1. Slice the chicken thighs into small pieces, trimming away the fat. Place the carrots, onions, parsnip, celery and garlic into your Russell Hobbs food processor and pulse to chop (not too small).
  2. Heat the oil in a large saucepan and saute the vegetables over medium heat for 3 minutes.  Add the chicken, herbs, salt and pepper and saute for a further 3 minutes, stirring.
  3. Add the chicken stock and simmer for 30 minutes or until chicken is cooked through.
  4. Sprinkle with chives and serve hot with fresh crusty bread.
Ingredients
  • 500g chicken thigh fillets
  • 3 large carrots, peeled & halved
  • 3 sticks celery, halved
  • 2 large onions, peeled and halved 
  • 1 small parsnip, peeled and halved
  • 1 clove of garlic
  • 2 tbs olive oil
  • 3 sprigs fresh thyme
  • Handful of roughly chopped parsley
  • Sea salt and pepper
  • 1L chicken stock
  • chives to serve
