Minestrone

A traditional Italian soup absolutely bursting with slow cooked flavours.

Method (Serves 4-6)

Preparation: 10 minutes
Cooking Time: 6 hours

  1. Pre-heat your Russell Hobbs Slow Cooker on High for 20 minutes.
  2. Meanwhile, chop the carrot, potato and onion; slice the leek, zucchini and celery and shred the cabbage.
  3. Place all ingredients (except macaroni) into the slow cooker and cook on Low for 5 hours.
  4. Add macaroni and cook for a further hour, or until cooked. Adjust seasoning if necessary and serve with grated parmesan cheese and fresh basil.
Ingredients
  • 25g butter
  • 1tbs extra virgin olive oil
  • 1 clove garlic, crushed
  • 1 large leek
  • 1 large zucchini
  • 2 large carrots
  • 2 large potatoes
  • 1 large onion
  • 2 celery sticks
  • 1/4 cabbage
  • 1/2 cup peas
  • 400g canned tomatoes
  • 400g Canelini beans, drained
  • 3cm slice pancetta, diced
  • 3tbs tomato paste
  • Salt and pepper to taste
  • 1L chicken stock
  • 2 cups water
  • 2 bay leaves
  • 3 sprigs thyme
  • 1 cup thin cut macaroni pasta
  • parmesan to serve
  • basil to serve
