Slow Cooked Pork with Vietnamese Coleslaw

Melt in your mouth slow cooked pork with a vibrant Vietnamese coleslaw to tickle your tastebuds. This dish is great for entertaining and can be made way ahead of time.


Preparation Time: 15 minutes
Cook Time: 6 hours

1.5kg pork roast or shoulder
1 tbs Chinese five spice
½ cup caster sugar
1 cup water
2 tbs fish sauce

1 ½ tbs brown sugar
3 tbs lime juice
1 tbs fish sauce, extra
1 carrot
¼ red cabbage
¼ Savoy cabbage
1 green apple
3 spring onions
1 bunch coriander, washed
Rice to serve


Serves 6-8

  1. Pre-heat your Russell Hobbs Slow Cooker on high for 20 minutes.  Sprinkle Chinese five spice all over the pork and let sit.
  2. Meanwhile, heat a large fry pan over medium heat.  Place the caster sugar in the pan and heat until just melted.  As it turns golden, stir in the water and fish sauce. 
  3. Place the pork in the slow cooker bowl and pour the sugar mixture over.  Cook for 6 hours or until pork is tender.
  4. Meanwhile, to make the dressing, mix the brown sugar, lime juice and fish sauce in a small jug.  Finely shred the carrot, cabbages and apple and place in a large bowl.  Slice the spring onions on a diagonal and mix through the salad along with fresh coriander leaves and the dressing. 
  5. Serve the pork over rice with the salad.  Delicious!
