Autumn Apple Cake

Try this simple yet impressive Autumn Apple Cake using your Russell Hobbs Blender. It has a delicious almost caramel flavour to it and the apples give it a lovely texture. Serve it warm or cold, this cake is a scrumptious treat especially with a drizzle of cream. Enjoy.......

  • 2 ripe apples, peeled, cored and diced
  • 2¼ cups plain flour
  • 3tsp baking powder
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ¼ tsp ground allspice
  • ¼ tsp nutmeg
  • 125g butter, melted
  • ½ cup caster sugar
  • 1 cup maple syrup
  • 2 eggs
  • 1 tsp lemon juice
  • ½ cup milk
  • Icing sugar for dusting

Method (Serves 10-12)

Preparation Time:     15 minutes
Cook Time:                 45 minutes

  1. Generously grease a deep 25cm Bundt cake tin and pre-heat your oven to 180°c.
  2. In a large bowl, sift together the flour, baking powder, salt, cinnamon, allspice and nutmeg.  Set aside.
  3. In your Russell Hobbs Blender, combine butter, sugar, maple syrup, eggs and lemon juice on low speed until combined.  Gradually mix in the flour mixture, then pulse in the milk until just combined.  Turn the blender off and fold in the chopped apple.
  4. Pour batter into the prepared cake tin and bake for 40-45 minutes or until a toothpick inserted into the centre of the cake comes out clean.  Allow to cool for 10 minutes in the cake tin before removing. 
  5. Dust with icing sugar before serving.
