Caramelised Apple Pudding

This slow cooked pudding will have you going back for seconds! A nostalgic dessert brimming with the flavour of apple, a hint of ginger and a delicious pool of apple caramel awaits at the bottom.



  • 2 cups self-raising flour
  • 1/3 cup brown sugar, firmly packed
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • 1 cup unsweetened applesauce
  • 1/3 cup milk
  • 100g butter, softened
  • 1 tsp vanilla
  • 1 egg

Caramelised Apple:

  • 1 apple, peeled, cored & diced
  • 1 cup brown sugar, firmly packed
  • 1 cup water

To Serve:

  •  Cream or ice-cream

Method- Serves 8-10

Preparation Time: 15 minutes
Cooking Time: 2 hours

  1. Combine the flour, brown sugar, cinnamon and ginger in a large bowl.   Make a well in the centre.  In a large jug, whisk together the applesauce, milk, butter, vanilla and egg.
  2. Using a wooden spoon, stir the wet ingredients into the dry ingredients to form the pudding batter.  Set aside.
  3. For the caramelised apple, place the apple, brown sugar and water in the Russell Hobbs Searing Slow Cooker pot and place it on the stove over medium heat.  Stir constantly until it comes to a boil.  Simmer for 2 minutes (don’t stir at this time) then carefully place back into the slow cooker unit.
  4. Carefully spoon in the pudding batter and smooth it to the edges with a wooden spoon.  Place the lid on, set to HIGH to cook for 2 hours.
  5. When the pudding is cooked, rest for 10 minutes with the lid off before serving warm with cream or ice-cream.  Make sure to use a silicone spoon or wooden spoon, to scoop up the sticky sauce from the bottom so you don’t scratch the cooking pot.
