Farmhouse Fruit Cake

A good old fashioned fruit cake for any time of the year, made with love and care following a traditional farmhouse recipe.

  • 150g butter
  • 150g caster sugar
  • 1 tsp vanilla essence
  • 75g glacé cherries, chopped
  • 75g each of sultanas and raisins
  • 25g mixed peel
  • 300g self raising flour
  • Pinch salt
  • 1 tsp mixed spice
  • 3 tbsp milk
  • 3 eggs
  • Cooking spray for greasing


Preparation Time: 10 minutes
Cooking Time: 90 minutes

  1. Preheat the oven to 160°C fan forced. Grease a 20cm round cake tin and line with greaseproof paper.
  2. Place the butter, sugar, vanilla and spices in the bowl of your Russell Hobbs bench mixer and beat at medium speed for 1 minute.  Add the fruit and mixed peel and mix to combine.
  3. Add the eggs and milk and beat for a few seconds then gradually add the flour and continue beating till well mixed.
  4. Pour into the prepared cake tin and bake for about 80 minutes.
  5. Cool in the tin for 15 minutes then turn on to a wire rack.
