  • 1 whole orange
  • 180g butter, softened
  • 3 eggs
  • 1 cup caster sugar
  • 1 ½ cups self-raising flour
  • 1tsp vanilla
  • Cooking oil spray

Orange Icing:

  • 250g cream cheese
  • 1 cup icing sugar
  • 1 tbs orange zest
  • 1 tbs orange juice
  • 2 tbs flaked almonds, lightly toasted

Method - Serves 10

Preparation Time: 10 minutes
Cooking Time: 40 minutes

  1. Pre-heat oven to 180°c convection or (160°c fan forced).  Generously grease a deep 23cm or 9inch round spring-form tin or bundt cake tin with non-stick cooking oil spray.
  2. Cut whole orange into quarters, remove any pips and place into the food processor bowl.  Pulse to combine.
  3. Add remaining ingredients and process for 1 minute until smooth.
  4. Pour into the prepared cake tin and bake for approximately 35-40 minutes or until a wooden skewer is pulled out clean from the middle of the cake.  Cool the cake in the tin for 20 minutes before turning out onto a cake rack to cool for a further 30 minutes.
  5. Meanwhile, place the icing ingredients (except the toasted almonds) in the cleaned food processor bowl and pulse a few times before processing on high for 20 seconds.
  6. When the cake is completely cool, ice and sprinkle with toasted almonds.
