Raspberry Friands

These gorgeous little cakes are so elegant and with a delicious outside crust it makes it very hard to stop at one! Try cooking these in your Russell Hobbs Toaster Oven, quick and easy bite size delights!

  • Cooking oil spray for greasing
  • 1 ½ cups pure icing sugar, sifted
  • ½ cup plain flour, sifted
  • 1 ½ cups almond meal
  • 3 eggs, lightly whisked
  • 180g unsalted butter, melted, cooled
  • 100g frozen raspberries
  • Pure icing sugar to dust


Preparation Time: 10 minutes
Cooking Time: 20 minutes

  1. Pre-heat your Russell Hobbs Toaster Oven to 160°c with both elements turned on.  Generously spray a mini-muffin tin with cooking oil spray.
  2. Place the sugar, flour and almond meal in a food processor and blitz to combine.  Pour in the eggs and butter and pulse to combine (don’t over mix).
  3. Half fill the mini-muffin holes and lightly press 2 raspberries into each.
  4. Bake for 12-18 minutes until golden in colour.  Set aside in the pan to cool slightly before transferring to wire racks to cool completely. 
  5. Dust with icing sugar to serve

TIP:  These freeze well and can be defrosted in the microwave.  If using a domestic household oven, increase the heat to 180°c.
