Ingredients

  1. 6 x Eggs
  2. 1 x small Onion
  3. 1/2 tub Sour Cream
  4. 1/2 grated Zucchini
  5. 1/2 can Creamed Corn
  6. 150g shredded Ham
  7. 2 x large handfuls of grated Cheese
  8. 5 x Stand 'n' Stuff Tacos
  9. Salt & Pepper

  1. Dice the onion finely, place into a microwave safe bowl with a dash of water, cover the bowl then microwave on high for 2-3mins until onion has softened.
  2. Drain excess water and set aside.
  3. Crack the eggs into a large bowl and whisk well.
  4. Add the sour cream, grated zucchini, creamed corn and stir until combined.
  5. Add the onion and ham to the egg mixture, season with salt and pepper and stir until well combined.
  6. Place 5 x Stand 'n' Stuff Tacos on the tray of the Russell Hobbs Bake Expert Mini Toaster Oven and place into the oven.
  7. Bake on 180°C for 20-30mins or until egg has risen and is cooked through.
