Ingredients

  1. 2x carrots, roughly chopped
  2. 1x cup walnuts
  3. 2x cups self raising flour
  4. ¾ cup brown sugar
  5. 2x eggs
  6. 1x tsp cinnamon ground
  7. 1x tsp mixed spice
  8. ½ cup vegetable oil
  9. 1 cup water
  10. 200g cream cheese
  11. 100ml thickened cream
  12. 2 tbsp icing sugar

  1. Preheat oven to 180°C and line/grease muffin trays.
  2. Using your Russell Hobbs Desire Matte Black 3-in-1 Hand Blender, add carrots and walnuts to the chopper and blitz them till they form a fine crumb.
  3. Add them into a separate bowl and combine with the flour, sugar, eggs, spices and vegetable oil. Give a stir through and then add water, continue to stir.
  4. Portion the mix evenly into the muffin holes and once you have no mixture left, place them in the oven for 20-25 minutes, or until tops are golden.
  5. Once the muffins are cooked, let them cool completely onto a cooling rack.
  6. In the beaker, add the cream cheese, thickened cream and icing sugar. Using the whisk attachment and whisk the ingredients together until a firm icing forms.
  7. Spread the icing onto the tops of the muffins and enjoy these with loved ones.
