Mrs Heemskerk's Pulled Chicken Burgers

This burger will have you very popular amongst family and friends, especially when entertaining large crowds!

Ingredients

  1. Olive oil
  2. 2x chicken breasts
  3. 2x cups chicken stock
  4. 1 cup BBQ sauce
  5. 2x carrots
  6. 2x small green apples
  7. ½ small sugar loaf cabbage
  8. 1x lime
  9. 1 tbsp wholegrain mustard
  10. 1 tbsp honey
  11. 4 brioche burger buns

  1. In a small size saucepan add a dash of olive oil and place the chicken breasts in there. Cover chicken with stock and BBQ sauce and cook for 30 minutes.
  2. Chop carrots and apples into large chunks as well as cabbage.
  3. Using the Russell Hobbs Desire Matte Black Mini Chopper, add the carrots and apples and blitz until a fine consistency forms. Remove from chopper and add to a separate bowl. Add the cabbage to the chopper and blitz the cabbage until it resembles a fine texture as well.
  4. Mix the cabbage through the carrot and apple and then continue to add the lime, mustard and honey. Give a good stir.
  5. Set aside whilst chicken finishes cooking.
  6. After 30 minutes the chicken will be ready. Take it off the heat and place your chicken (without sauce) into a separate bowl. Using your Russell Hobbs Desire Matte Black Hand Mixer, start to shred the chicken. Keep it on the lowest speed and you will soon see the chicken falling apart. (Don’t be too heavy handed on the mixing, as you want to keep it light and stringy). Once the chicken is completely broken up by the mixer you can add the excess sauce back in over the top and the chicken will soak it up.
  7. Start assembling your burger buns!
  8. Cut the buns in half and add the chicken on the bottom and top with the fresh slaw that’s already been made- the perfect meal for the family!
