Antipasti Stuffed Red Peppers

Impress your diners with these bright red and deliciously stuffed red capsicums, bursting with Italian flavours for a stunning and healthy meal.

  • 250g sachet microwave brown rice, prepared to packet instructions
  • 150g mixed antipasti, chopped roughly
  • 50g feta, cubed
  • ½ cup Continental parsley
  • Zest of half a lemon
  • Salt & pepper to taste
  • 1 tbs extra virgin olive oil
  • 1 large red capsicum, halved and de-seeded
  • 40g Parmesan cheese, grated

Method (Serves 2)

Preparation Time: 10 minutes
Cooking Time: 25 minutes

  1. Line a small flat oven tray with baking paper. 
  2. Place the rice, antipasti, feta, parsley, lemon zest, salt, pepper and oil in a large bowl and mix to combine.  Stuff the capsicum halves with the rice mixture, sprinkle with grated parmesan cheese and place on the oven tray.
  3. Turn your Russell Hobbs Toaster Oven on to 160°c with top and bottom elements on.  Bake the stuffed capsicums in the oven for 25-30 minutes until golden brown on top.
