This flavoursome and healthy Middle Eastern dip makes for a delicious addition to your entertaining menu or simply enjoy as an every day snack. Add to a wrap with salad or a dip for entertaining, or simply serve as a condiment with barbecued meats.
400g can chickpeas
2 cloves garlic, crushed
1 tsp sea salt
3 tbs lemon juice
3 tbs extra virgin olive oil
1/2 cup Tahini paste
1/2 tsp ground cumin
1/2 tsp ground coriander seeds
1/4 tsp cinnamon
Extra virgin olive oil to serve
1/2 tsp smoked paprika to serve
Method (Makes approx. 2 cups)
Drain the canned chickpeas, reserve 2 tbs of the chickpea liquid to loosten the hummus mix if required.
Combine chickpeas, garlic, salt, lemon juice, oil, Tahini paste and spices in your Russell Hobbs Food Processor or Blender and blend until smooth. Taste to adjust seasoning and should the mix be too thick, add some of the chickpea liquid from the can.
Transfer the hummus to a bowl, cover and store in the fridge for at least an hour. Serve with a drizzle of extra virgin olive oil, a dusting of smoked paprika and lightly toasted pita wedges or vegetable sticks.
