Sweetcorn Fritters

Serve these tasty sweetcorn fritters with your next big breakfast or as a light lunch with a fresh garden salad.

  • 150g self raising flour
  • Pinch of sea salt
  • 1/4 tsp white pepper
  • 125ml milk
  • 2 free-range eggs
  • 400g can sweetcorn
  • 1 spring onion, finely diced
  • 1 red chilli, seeded and finely sliced
  • 1/2 cup cheddar cheese, grated
  • 1/2 cup parsley, finely chopped
  • Cooking oil spray 

Method (Serves 4-6)

  1. Pre-heat your Russell Hobbs Grill to medium heat.
  2. Sift the flour, salt and white pepper into a bowl. Make a well in the centre and add the milk and eggs. Whisk until batter is smooth.  Add sweetcorn, spring onion, chilli (if using), cheese and stir until well combined.
  3. Generously spray your Russell Hobbs Grill with cooking oil spray.  Place spoonfuls of the mixture onto the pre-heated grill and cook on both sides until golden brown.

TIP: Serve Mexican style with smashed avocado, sweet chilli sauce and a dollop of sour cream.
