Slow Cooker Chicken Recipes


  • 2 tbsp olive oil
  • 1kg chicken thigh fillets, halved
  • 1kg chicken drumsticks
  • 1 large onion, diced
  • 2 cloves garlic, crushed
  • 4 sprigs fresh thyme
  • 200g button mushrooms, quartered
  • 1/2 cup dry white wine
  • 1/2 cup chicken stock
  • 2 tbs tomato paste
  • 1 tsp lemon zest
  • 400l canned diced tomatoes
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • 1 cup fresh parsley, roughly chopped
  • 2 carrots peeled and diced
  • 120g pitted kalamata olives
  • 2 celery sticks, diced

Serves 4

  1. In a large frypan over medium-high heat, brown the chicken, onion, and garlic in the olive oil.
  2. Combine the sautéed chicken, onion and garlic with all the remaining ingredients, except the parsley, in the slow cooker ceramic bowl.
  3. Place the lid on the bowl and cook for 3-4 hours on high or 7-8 hours on low.
  4. Season with salt and black pepper to taste and stir in the parsley before serving.
